Haitian Turkey

Ingredients
- 11 lb turkey
- 4 lemons or sour oranges (for cleaning)
- 4 lemons, quartered (for cooking)
- 1 tbsp oil (for basting the turkey before cooking)
- zest of 1 lemon
- salt and pepper (for the skin)
Ingredients for the seasoning
- 1 bunch parsley
- 1 bunch thyme
- 5 cloves garlic
- 7 green onions
- 1/2 onion
- 1/4 cup vinegar
- 1/4 cup oil
- 2 scotch bonnet peppers, seeded
- 4 bay leaves
- 1 tsp peppercorns
- 1 tsp coarse salt
Ingredients for the improvised stuffing
- 3 cups of bread or croutons, cut into small pieces
- 2 cups of mushrooms, cut into small pieces
- 4 onions, finely chopped
- 2 slices of bacon or coating, cut into small pieces
- 4 green onions, roughly chopped
- the zest of 1 lemon
- 2 stalks of celery with leaves
- 1 tbsp. oil
- 2 tbsp. butter
- salt and pepper to taste
Haitian Fried Banana

Ingredients
• 2 green plantains
• 1 tbsp salt
• 1 L water (4 cups)
• 2 tbsp vinegar
• Enough oil for frying
Haitian Beetroot Salad

Ingredients
• 3 large beets
• 12 baby potatoes
• 1 large carrot, diced
• 1 shallot, finely chopped
• 1/4 cup mayonnaise (regular or vegan)
• Salt
• Pepper
Haitian Pickles

Ingredients
• 1/2 head of cabbage
• 1 large carrot or 2 medium
• 1/4 red cabbage optional to add color
• 2 cups vinegar
• 1/3 cup vegetable broth
• 4 scotch bonnet or habanero peppers
• 3 radishes
• 4 cloves garlic
• 1 bell pepper
• 1 onion
• 1 green onion
• 2 tsp salt or to taste to reduce acidity
• Ground pepper to taste
