  • 5 cloves garlic
  • 7 green onions
  • 1/2 onion
  • 1/4 cup vinegar
  • 1/4 cup oil
  • 2 scotch bonnet peppers, seeded
  • 4 bay leaves
  • 1 tsp peppercorns
  • 1 tsp coarse salt

Ingredients for the improvised stuffing

  • 3 cups of bread or croutons, cut into small pieces
  • 2 cups of mushrooms, cut into small pieces
  • 4 onions, finely chopped
  • 2 slices of bacon or coating, cut into small pieces
  • 4 green onions, roughly chopped
  • the zest of 1 lemon
  • 2 stalks of celery with leaves
  • 1 tbsp. oil
  • 2 tbsp. butter
  • salt and pepper to taste
